I understand the AV part but what does the NSC stand for when entering an open show?

Not Separately Classified - ie does not have a breed class at that show.  Often split by Group too eg AV Gundog NSC

Not Separately Classified, ie any breed that has its own classes can't compete but if there are no classes scheduled for your breed you enter this one instead.

AV Working would be any breed classified as working but I have no idea what the 2 would mean - unless its a brace class? :-) (but its an odd way to write it usually says Brace)
